The Beginning

From Hearth to Heart

Ember & Olive was born from a simple obsession: the elemental relationship between wood-fire and the raw beauty of Mediterranean ingredients. Founded in 2015 by Chef Julian Ross, our restaurant is a tribute to the coastal tavernas and rustic farmsteads where food is more than sustenance—it is a celebration of life.

We believe that the best flavors come from the simplest methods. Our kitchen centers around a custom-built, five-ton wood-burning oven, where we use local hickory and oak to coax complex depths from everything we touch, from our hand-pressed olive oils to our prime aged meats.
